I set up a new forum, but I have not received an activation email and password. I have tried what has been suggested to change the email address as I could not find anything in the junk or spam folders using outlook or on the web based version of my email, and still nothing.

I have never heard of that e-mail provider... Hmmmmmm

Try using
Only registered users can see links on this forum!

to make your forum. That's what I have used with all my ForumUp Forums and have recieved my e-mails before I can get to my inbox. Yahoo is free.

I have tried that, and I have been sent a new password, I have clicked on the link in the email, but it now says I have typed in an invlaid username or password. I copied and pasted the password too just incase I had made a mistake, but no luck.

That is most likely because you have pressed recieve a new password multiple times. For now, wait an hour or so, check your e-mail, if there are multiple e-mails from ForumUp use the most recent one. If that doesn't work please come back to this thread for more help.
